Quick Pickle recipe-prepared using raw turmeric, green chili and fresh lime

Pickles are an integral part of Indian food be it rice eating or paranthas(flat bread) dominant regions, pickle are a must when it comes to Indian meal. Pickles have a wide range of flavours and textures. Indian pickles are generally pickled with oil, vinegar, lemon juice or water. Indian pickles are often made into fresh relish and chutney, which provides additional flavours to food.
This green chili, turmeric and lime pickle is a very healthy pickle recipe, where I have used Extra Virgin Olive Oil as preservative and flavour enhancer.
It is a very simple yet tangy, full of flavours and healthier option compared to other pickle recipe. I have deliberately not added any spices to retain the true flavours of chilies, turmeric and lime!

Ingredients for green chili, turmeric and lime pickle:
Raw Turmeric: 100 gm
Green Chili: 50 gm
Fresh Lime: 100 gm
Extra Virgin Olive Oil 50 ml
Salt 2 tbsp
Preparation of green chili, turmeric and lime pickle:
- Wash all ingredients under running water. Peel off raw turmeric.
- Cut Green chilies and lime into small pieces.
- Put all ingredients in a mixing bowl.
- Add salt and Olive Oil and mix them well.
- Fill the pickle in clean dry air tight glass jar and keep it in sunlight for 4-5 days.
- Your Indian green chili, turmeric and lime pickle ready to be served.
