Amritsar historically also known as Rāmdāspur and colloquially as Ambarsar, is a city the state of Punjab. Amritsar is famous for its food globally and the recipes in Amritsari cuisine are very rich loaded with butter, desi ghee (clarified utter) and nuts. One such very popular breakfast recipe is amritsari kulcha served with chana/chole, or curd/yogurt.

There is a saying that the water of Amritsar city has properties which actually helps in easy digestion of dishes loaded with butter and ghee prepared in Amritsar!

This crispy Amritsari Kulcha recipe is a must try thing whenever I visit Amritsar. For the benefit of millions of foodies across the globe, I present this Amritsari Kulcha recipe.
The trick to this amazing recipe is preparing very special buttery very soft dough. The stuffing is equally important; hence I have tried a mixed paneer (cottage cheese) and aloo (potato) for filling. I always prefer to grate the boiled potato and paneer than the very popular mashed version. Using grated version helps in spreading the dough evenly in the flat bread so that every bite is perfect in the mouth.

Ingredients for Amritsari Kulcha:

For Dough
500 gm all purpose flour
1 tbsp yogurt
1 tsp salt
200 gm butter
1 tbsp olive oil


For filling/stuffing:

50 gm boiled & grated potato
50 gm grated paneer
50 gm finely chopped onion
2 green chili finely chopped
1 tsp coriander leaves
Salt to taste
½ tsp garam masala powder
½ tsp dhania (coriander) powder
½ tsp amchoor (dry mango powder)

Preparation of dough for amritsari kulcha:

Add all-purpose flour, curd, olive oil and salt in 1 large bowl and mix it well using hands.

Now prepare soft dough using warm water.

Now spread the dough using the rolling pin and spread a layer of butter and roll it up.

Repeat this step twice. Now divide the dough into 8 equal parts and rest these 8 balls for 30  minutes.

Preparation of filling for amritsari kulcha:

Mix all ingredients i.e. potato, paneer, onion, chilies, coriander and spices in a large bowl and mix them well using spatula.

Steps to make Amritsari Kulcha

Preheat your oven to 200 degree Celsius for 10 minutes.

Gently spread one ball with thick centre and thinner outer area to create space for stuffing.

Now seal the ball and roll it into round flat bread.

Place the bread in oven and spray water on the top surface to ensure crispy kulchas.

After 5-6 min, flip the side and spray water again and bake for another 6-7 min till golden brown in colour.

Take out from oven and  add 1tsp of butter on the top.
