I use the chickpea stock to add base to this no onion no garlic amritsari chana recipe plus this stock absorbs all flavours from cardamom, cinnamon and mace used during boiling of chana.

Ingredients for no onon no garlic amritsari chana recipe:
Kabuli Chana (Chickpea) – 50 gm
Tomato (chopped) – 2 medium
Ginger( julienne) – 7-10 nos.
Anardana (pomegranate seeds) – 1 tsp.
Garam Masala Powder (Indian mixed herbs) – 1 tsp.
Dhania (Corainder seed Powder) – 1 ½ teaspoon
Cardamom -3 nos.
Cinnamon – 1 stick
Javitri (mace) – 1 pc.
Zeera (cumin seeds) – ½ tsp.
Green Chili – 2 sliced

Ingredients for chana masala
Coriander leaves (fine chopped) – 1 tsp.
Salt – to taste
Olive Oil – 2 tbsp.
Preparation of no onon no garlic amritsari chana recipe:
Soak kabuli chana (chick pea) in warm water for 3-4 hours.
Put soaked chana in pressure cooker and add salt, cardamom, mace, cinnamon& 1 teabag and place it on low flame for about 30 minutes.

Once cold, drain the water and throw away the tea bag. Keep the stock for making gravy for this chana recipe.
Crush anardana (pomegranate seeds) in mixer.
Now heat 2 tbsp. of olive oil in a pan, and add ginger julienne, green chilies, cumin seeds, and pomegranate seeds in the pan.
Now add tomatoes and salt and cook on high flame for 3 min, then simmer it for 10 min till tomatoes are tender.
Now add coriander and garam masala powder and cook for another 2 min.
Finally add boiled chana(chickpea), stock and bring it to boil.
Now cook on slow flame for 5 min.
Garnish with coriander, ginger julienne and green chilli.
Serve this no onion no garlic amritsari chana with amritsari kulcha or bhatura.
