Lot of times I was googling on how to make vinaigrette salad dressing and some interesting ones were using balsamic vinegar or apple cider vinegar. Because we have a diabetic patient at home, I wanted to create a recipe which can be healthier for diabetes patients.

Last trade fair I had purchased black plum vinegar (jamun ka sirka) as jamun is proven to be very healthy for diabetes. Black plum is a fruit of low glycemic index which keeps blood sugar level under check as well as cures common diabetes symptoms and complications like excess thirst, urination and etc.

Thumb rule for classic vinaigrette dressing recipe 

3 parts olive oil plus 1 part vinegar

Black plum vinaigrette salad dressing can be prepared and stored in refrigerator for couple of days. It add a zing and makes the salads yummilicious.

Ingredients Black plum vinaigrette salad dressing:

Extra virgin olive oil – 6 tbsp.

Jamun Sirka (black plum vinegar) – 2 tbsp.

Dry or fresh Basil – 1 tsp

Black pepper – 1 tsp

Salt – to taste




Preparation of Jamun sirka vinaigrette dressing

Add olive oil, herbs vinegar and salt in a bowl and whisk them well.

Your black plum vinaigrette salad dressing is ready to be poured over your favourite salad or simply use it as dip with any or everything.

Apple walnut zucchini salad with black plum vinaigrette dressing

How to prepare a quick & healthy salad recipe for diabetics

Ingredients

  • 1 Bowl cut apple
  • ½ Bowl cut cherry tomatoes
  • 1 Bowl cut yellow zucchini or green zucchini
  • 2 Bunches Red leaf lettuce or green lettuce
  • 1/4th cup roasted walnuts
  • ½ cup Black plum vinaigrette salad dressing

Instructions

  • Wash all veggies and fruits thoroughly and cut them into big pieces. Chop the lettuce leaf coarsely.
  • Place all ingredients in a large plate or bowl.
  • Drizzle Black plum vinaigrette salad dressing and mix it well with the Apple walnut yellow zucchini salad.
  • Keep in refrigerator for 10 minutes and serve cold.

Notes

You can replace zucchini with cucumber, if it is difficult to find zucchini in your city

You can add pineapple slices and banana also in this fruit salad. Since I wanted to prepare crunchy and juicy fruit salad suited for diabetic patients, I have not used these fruits.
