Being a true banarasi, I always feel nostalgic about school and college days when we used to enjoy thick lassi served in kullarh (earthen cup). This lassi is really amazing and the yogurt available in cities can’t ever come near to the taste of traditional way of yogurt and lassi making in Benaras.

The magic is because on concentrated milk used to prepare curd in earthen pot, which adds a earthy flavour to this yogurt. I can confidently say that you get best sweets in Varanasi. I have tried sweets in various cities in India, but nothing can beat the best tasting sweets in Benaras.

Your trip to Varanasi will be incomplete if you do not visit Pehelwan lassi bhandar.  They make the best lassi in the world.

Ingredients for Banarasi Lassi:

Tradtionally-prepared-curd-or-yogurt

Traditionally prepared barnarasi yogurt

Thick full cream yogurt: 500 gm

Sugar: 200 gm

Ice cubes

 

Preparation of Banarasi lassi:

1.     Add all ingredients i.e. yogurt, sugar and ice cubes in deep pot.

2.     Use mathani or hand churner to whisk the mixture

3.     Serve them in earthen cup or kullarh to get authentic taste of Banarasi lassi.
