Apple Cinnamon Muffins
Muffins are my favourite because of a very simple reason that they just yummy, quick to make and really great for your midnight sweet hunger pangs.
Apple cinnamon muffins recipe is one such recipe, which my kids just relish. I have used half butter and half olive oil to make it healthier.

Total Time: 55 min
Ingredients Apple cinnamon muffins:
All Purpose Flour (Maida) – 1 ½ cups or 150 gm
Baking Powder – 1 teaspoon
Castor Sugar – 80 gm
Eggs – 2 no.
Salted Butter – 50 gm
Olive Oil – 30 ml
Curd – 75 gm
Natural vanilla essence – 1 teaspoon
Apples – 1 apple grated and 1 peeled and small bits
Cinnamon powder – 1 teaspoon
Preparation of Apple Cinnamon Muffins Batter:
Sieve together flour, cinnamon powder and baking powder in a plate or bowl and keep it aside.
Add 30ml Olive Oil and butter and microwave them for 20 sec.
Note: Ensure that the butter does not melt but just gets soft. This is very important to have soft and spongy muffins.
Now take 2 eggs which are at room temperature and add 2 spoon of sugar powder and start beating the egg using egg beater. Keep on adding sugar every 5 min and continue beating. Once the mixture has gained volume add olive oil, butter and curd and mix them well.
Now add few drops of natural vanilla essence grated apple mix them well.
Pre heat the oven at 180 degree Celsius for 8-10 min.
Now add flour and apple pieces in small portions and use flat spatula using cut and circle method to mix the apple cinnamon muffins batter evenly.
Now pour the mixtures equally into 8 muffins mold in preheated oven and bake at 180 degree for 20 -25 min.
Take out the cake from oven and allow it to rest on wire rack for 1 hour till it cools down.
