Ingredients: For Puff Pastry Dough

 

All Purpose Flour (Maida) –250 gm
Lemon Juice – 1 teaspoon

Salt – 1 teaspoon

Butter – 300 gms
Egg (egg wash) – 1 no.
For Olive and cheese stuffing:

Ingredients for olive cheese puff pastry stuffing

Green pitted Olives – 4-6 nos.
Cheddar cheese – 100 gm
Onion (chopped) – 2 no’s
Tomato (chopped) – 1 no
Red chili flakes – ½ teaspoon
Mixed Herbs – ½ teaspoon
Olive Oil – 2 teaspoon
Salt – to taste

Preparation of puff Pastry Dough:
Take 250 gm. all-purpose flour, 100 gm butter, salt, lemon juice and cold water in 1 large bowl and mix it well using spatula/hands.
Keep this dough in wrapped inside refrigerator overnight.
Take out dough, give incision and roll outward, keeping thick in centre.
Place 200 gm butter in centre and fold from all 4 sides. Roll it softly into a long rectangle and fold it 2 twice and keep it in refrigerator.
Take it out of refrigerator after 2 hours and roll it again the same way, and fold and keep it back in refrigerator.
Repeat this process 2 more times.
For the final time roll it out almost 6 times of its size and cut it into 12 equal parts using pizza cutter or knife.

For Stuffing:

Stir fry onion, tomatoes, add olives, herbs, red chili flakes and salt, and fry in medium flame for 5-6 min. Transfer the stuffing in a bowl and let it cool down.

Cut cheese into small cubes and mix them in cold stuffing.

 
Making Puff Pastry Recipe-Olive and cheese stuffed:

Roll the puff pastry sheet into long sheet. Spread the filling and roll the pastry sheet like Swiss roll.
Cut the roll into 6-8 pieces. Place the cut pieces on butter paper.
Preheat the oven to 200 degree Celsius for 15 min.
Now apply egg wash on top, using brush and place it in the preheated oven for 15-20 min.
Note: Pause the oven after 10 min and apply 1 more coat of egg wash with brush to shiny golden colour. Now reduce the temperature to 180 degree Celsius and bake for 10 more min
Remove from oven and allow it to cool on wooden tray/wire rack.
