Olive spinach curry recipe – Palak Olive recipe

Spinach or palak based curry recipes are very popular in India and palak paneer, palak ghosht, aloo palak are preferred across India.Olive spinach curry recipe is an Indian fusion curry recipe which can taste just perfect with dinner breads as well as rice.

Olive spinach curry recipe has a generous use of butter, apart from whole Indian spices. The distinct taste of olive spinach veggie comes because of ginger and olive grilled in butter.

Olive spinach curry ingredients:



Spinach – 750 gm


Olive and butter

Queen green pimiento stuffed Olives – 150 gm
Onion (chopped) -50 gm


Sliced Onion

Ginger(sliced) – 1 teaspoon

Tomato Paste– 50 gm
Black pepper – 1 teaspoon
Cumin seeds – 1 teaspoon
Green cardamom – 2
Sugar – 2 tablespoon
Salt – to taste
Butter (for olive grill) – 50 gm
Olive Oil – 2 tablespoon for bhunoing

Olive spinach curry recipe preperation:

Wash the spinach 3-4 times under running water.
Put saucepan on stove and add 200ml water and 1 teaspoon salt. Bring it to boil.
Now add spinach and cover it with a lid. Let it boil for 10 min.


Boiled Spinach

Stain the boiled spinach using stainer and let it cool down.
Meanwhile cut olives into 2 pcs, add butter and put them in oven in grill mode for 15 min till you get the mouth watering aroma of grilled olives.

Prepare spinach paste in mixer grinder.
Crush dry spices in mixer grinder.
Heat the sauce pan and add olive oil and put onion, garlic & ginger and fry them till golden in colour.
Add spinach puree and fry the paste in slow flame for 5 min.
Now add olives and spices and fry it on slow flame for 5-7 min.
Now add water, sugar and salt to taste, add some water and allow the curry to thicken in low flame for 10 min.
Pour the curry on serving bowl and garnish it with ginger flakes and butter.


Palak olive curry

Serve it with hot rice or dinner roll



• To make awesome gravy always prepare gravy on low flame
• Since olives are very salty since always preserved in brine(salt water) be careful while putting salt in your recipe.
