Kesar Wali Kheer – Indian Dessert
Being a true Banarasi by heart, our entire family has been real fans of Banarasi Mithai (Indian sweets) and Kesar wali kheer served in earthen pot in Banaras ki gali still makes us nostalgic.
Kesar Wali Kheer is a very simple dessert, but it takes long hours and patience to prepare a just perfect textured and balanced kesar wali kheer.

Total Time: 3 Hours
Ingredients for kesar Wali Kheer:
Long Rice – 20 gm
Full Cream Milk – 2 litres
Sugar – 250 gm
Kesar ( saffron) – 10-12 petals
Green Cardamom – 4-5 no.
Raisins – 25 gm
Desi Ghee/Olive Oil – 1 teaspoon for roasting
Preparation of Kesar Wali Kheer:
Wash rice under water and drain the water using stainer.
Put a pan on hot plate, pour 1 teaspoon of Desi ghee or Olive Oil and add moist rice.Roast the rice with constant stirring till light golden colour.
Now add 2 litre of full cream milk and let the mixture simmer with occasional stirring.
Add kesar (saffron petals), once milk has started to boil.
Let it simmer for at least 1 ½ hour or till milk has evaporated to 1/3rd of Original volume.
Now add raisins, and let it further cook for 30 min till it has become thick and water has almost evaporated giving it thick paste like texture.
Grind the sugar in mixer along with green cardamom.
Now pour the sugar powder and switch off the flame after 5 min or till sugar has melted.

Transfer the kheer in serving bowl and put it in refrigerator for 2 hours
