Sweet bread recipe – apple prunes cinnamon stuffed sweet bread

Sweet bread has been one my favourite Sunday brunch dish and what better than freshly baked apple prunes cinnamon stuffed bread with a cup of coffee. I wanted to create sweeter bread and used grated apple cooked in sugar syrup and cinnamon and sugar powder.

The oval shape for apple prune sweet bread was specially chosen to evenly spread this magical filling and to retain the juices inside once bread is being baked.

Ingredients:
For Dough
All Purpose Flour (Maida) – 500 gm
Active Yeast – 1 ½ teaspoon
Sugar – 8 teaspoon
Salt – 1 ½ teaspoon
Olive Oil – 2 tablespoon

For filling

California prunes – 50 gm

Apple – 50 gml
Cinnamon and sugar powder – 2 teaspoon

Preparation of Apple prunes cinnamon stuffed sweet bread
dough:
Warm 50 ml water and add 2 teaspoon of sugar and stir to dissolve the sugar.
Now add 1 ½ teaspoon of dry active yeast and keep it aside for 15 min till you see frothy mixture.
Note: Do not heat water above 80 degree Celsius as it would kill the yeast and yeast will not get activated.

Take all-purpose flour, olive oil and salt, cranberry, orange peel and 4 teaspoon of sugar in 1 large bowl and mix it well using hands.
Now add activated yeast and prepare soft dough using warm water.
Keep this dough in covered warm place for 80-100 minutes or till it doubles in size.
Knead again using hands and keep it in warm place again for 80 -90 min

Preparing Bread:
Divide dough into 4 equal balls.
Flatten the dough using heavy rolling pin ensuring that the middle is thicker than outside.
Give slits in the rolled up dough. Put the apple and prunes filling in centre thick portion and sprinkle cinnamon and sugar powder. Start folding like petals of flower alternating from each side.
Cover it with moist cotton cloth and let it rest for 60 min.

Baking Apple prunes sweet bread:
Preheat the oven to 170 degree Celsius for 10 min.
Put the Bread in preheated oven for 30-35 min till golden brown in colour.
Remove from oven and let it cool on the wire rack.
Cut the Bread Loaf into 2 halves using bread Knife.
