Queen Pitted Olive Fritter – with green chillies, raisins and Cinnamon & Sugar powder stuffing

Stuffed Queen Olive Pakoda has all the flavours for your tongue-Salt, spice, sweet and sour flavours. The flavours turn from salty and sour outside to sweet and spicy inside. You can surprise your loved ones and your guests with surprise.

You have to choose real big pitted Olives; otherwise it will not be possible to stuff the olives properly. The trick is to have a balance of fleshy olives outside with sweet & spicy cinnamon flavour inside.
Stuffed Queen Olive pakodas can be served as a cocktail snack too.

Ingredients:
Queen pitted Olives – 400 gm (20 -25 nos)
Gram Flour (Besan) – 100 gm
Salt – to taste
Olive Oil – 250 ml (for frying)

For queen olive Pakoda stuffing:

Green Chillies – 2 nos. (finely chopped)
Raisins – 2 teaspoon (finely chopped)
Cinnamon & sugar powder – 2 teaspoon

 

 

 

Method:
Take out Olives from bottle and drain the brine (salt water)

Take Besan (gram flour) in a bowl and prepare a thick batter till its light.
Add salt and keep it aside.
Mix chopped green chillies, raisins, cinnamon and sugar powder together and add few drops of water and create a moist filling.
Take a small portion of this filling and stuff them gently in each olive using tooth picks.

Place Kadhai (pan) on Gas stove and pour 250 ml of Olive Oil.
Heat the Oil to about 180 degree Celsius
Dip stuffed olives in besan batter and gently put them in hot oil.
Deep fry them in medium flame for 10-12 min till crispy golden in colour

Serve it with fresh juice or any soda based ice chilled drink.

Olive Tips:

• You can replace green chillies with Jalapeños to reduce intensity of chilly fire.
• Since olives are very salty since always preserved in brine(salt water) be careful while putting salt
