It is a perfect example of Indian Italian fusion cuisine. We always love having more. What if 1 bite gave authentic Spicy Indian flavor and the other bite gives the mild cheesy European flavor. Yes it is very much possible with this bread recipe.

For Dough
All Purpose Flour (Maida) – 500 gm
Dry Active Yeast – 1 ½ teaspoon
Sugar – 2 teaspoon
Salt – 1 teaspoon
Olive Oil – 2 tablespoon

For Italian Stuffing
Green pitted Olives – 8 nos.
Mozzarella/cheddar Cheese – 75 gm
Italian Seasoning – 1 teaspoon


Double stuffing

For Indian stuffing

Onion (sliced) – 2 no’s

Cabbage (chopped) – 100 gm
Capsicum – 50 gm
Dry red chilies (chopped) – 2 no’s
Tomato Ketchup – 2 teaspoon
Garam masala – 1 teaspoon

Preparation of Bread Dough
Warm 50 ml water (in microwave for 30 sec) and add 2 teaspoon of sugar.
Now add 1 ½ teaspoon of dry active yeast and keep it aside for 15 mins till you see frothy mixture of active yeast.
Note: Water should be not more than 80 degree Celsius as it will kill the yeast.
Take 500 gm. all-purpose flour, olive oil, and salt in 1 large bowl and mix it well using spatula/hands.
Now add activated yeast and prepare soft dough using more warm water.
Keep this dough in covered warm place for about 60 minutes or till it doubles in size.
Tip: I preheat the oven to 120 degree Celsius for 10 min and then switch off and keep the dough in oven to let it rise.
Knead again using hands and keep it in warm place again for 60 min.

For Indian Stuffing

Stir fry onion, capsicum, red chilies in pan and before switching off the flame, add tomato ketchup and garam masala powder.



For Italian Stuffing

Take green pitted olives and chop the Olives. Take mozzarella or cheddar cheese cut them in cubes, add Italian seasoning, salt and mix them well.



Making Double stuffed cheesy bread

Divide the dough into 3 equal parts.
Take 1 part and flatten it with your hand. Now use rolling pin to make long flat rectangle. Now place Indian and Italian stuffing in 2 separate rows at a distance of 1-2 inch distance. Start rolling from one side carefully so that both the layers are separated. Place it on a board or plate which is dusted with dry flour to prevent it from sticking on the surface. Similarly prepare other 2 breads arrange them on the wooden or chopping board.

Cover the bread with moist cloth and allow it to rest for at least 90 min more.

After 90 minutes it will double in size.

Preheat the oven to 190 degree Celsius for 15 min.
Now apply milk to the bread, using brush and place it in the preheated oven for 20-25 min.

Note: Pause the oven after 10 min and apply 1 more coat of milk with brush to keep them soft and the top golden in colour.

Remove from oven and allow it to cool on wire rack.
Now cut the double stuffed cheesy bread into slices and serve them hot to your friends and family members.
