I remember very vividly that when we were kids the overnight leftover food was never an issue with our parents. In fact it was intentional to prepare some extra food and our maid whom we lovingly called “amma” would just relish along with a hot cup of tea.

Nowadays with nuclear families, busy lifestyle and maids who feel offended if someone offers them overnight food, the leftovers are becoming a concern for all. None of us like the food to be thrown away in bin. Also it is very important for our kids to understand the importance of respecting food and not make faces when being served yesterday’s food.
However we need to understand that we need to customize the food to make them interesting for kids and Pasta with leftover chapati is one such recipe. This recipe is inspired by Indian Marathi dish popularly called as “Chapatichey Tukde” or “Chapati Chura” or “Fodnichi Poli”

Chapati – 2 nos
Vegetables – of choice (green peas, carrot, beans, cabbage, Broccoli) or veggies which your kids love
Onion (chopped) – 1 tablespoon
Tomato (chopped) – 1 tablespoon
Tomato Ketchup – 1 teaspoon
Pasta Sauce – 1-2 teaspoon
Salt – to taste
Olive Oil – 1 tablespoon
Green Pimiento stuffed Olives – 6 nos.
Basil (dry) – ½ teaspoon
Mozzarella cheese (sliced) – 50 gms

Preparation of Chapati Pasta:

Take chapatis and tear into small pieces. Sprinkle some water and leave it for 10-15 mins like we do for Poha preparation. It is very important step; otherwise recipe will become very hard and will not taste the best.
Heat Olive Oil in pan and add onion, tomatoes, green olives and vegetables of your choice and stir fry for 2-3 min. Now

add chapatti pieces, tomato ketchup and pasta sauce. Mix them well for another 3-4 min.
Transfer the prepared chapati pasta in Baking dish, add mozzarella cheese strips and bake for 12-15 min in preheated oven at 190 degree Celsius.
