Pizza has become a global phenomenon and in last 10 years has spread out to entire globe, with the pizza restaurants doing brisk business around the year.
One of the important business strategy adopted by these Pizza companies has been localization of the recipe to the extent that the current menu of these fast food giants consist of 60 -70% of local flavours or fusion recipes in countries like India.
Olive masala pizza recipe has been created keeping in mind the likes and dislikes of our kids. So without wasting any more time, let’s get into action.

For Dough
All Purpose Flour (Maida) – 500 gm
Active Yeast – 1tsp
Sugar – 3 teaspoon
Salt – 1 teaspoon
Extra Virgin Olive Oil – 2 tablespoon

Ingredients for Pizza Sauce:

Tomato (blanched and finely chopped) – 100 gm
Tomato Puree – 200 gm
Garlic (finely chopped) – 6-8 cloves
Onion (finely chopped) – 25 gm
Italian Pizza seasoning – 2 teaspoon
Red chilly flakes – 1 teaspoon
Olive Oil – 2 tablespoon
Sugar – 2 teaspoon
Salt to taste

Ingredients for Olive masala topping:

Tomato (diced) – 50 gm
Green Olives (chopped) – 25 gm

Cottage Cheese (paneer) – 50 gm

Onion (diced) – 25 gm
Green Capsicum (diced) – 25 gm
Spring Onion (chopped) – 2 tablespoon
Mozzarella Cheese (grated)- 400 gm

Preparation of Dough:

Warm 100 ml water and add 2 teaspoon of sugar and mix water.
Now add 2 tsp of dry active yeast and keep it aside for 15-20 mins till you see frothy mixture.
Note: Do not heat water above 80 degrees Celsius otherwise yeast will not get activated.
Take all-purpose flour, extra virgin olive oil and salt in a large bowl and mix it well using spatula.
Now add activated yeast and prepare soft dough by hands. Add warm water in small quantities till you get soft dough perfect for pizza base.
Keep this dough in covered warm place for 30-45 minutes or till it doubles in size.
Puncture the dough and knead again using hands and keep it in warm place again for 30 -45 min

Preparation of Pizza sauce:

Heat the pan and add 2 tablespoon of Olive oil.
Add garlic, onion and stir fry for 2-3 min.
Now add blanched & chopped tomatoes and add red chilly flakes. Stir fry in low flame for 7-8 mins.
Now add tomato puree, sugar and Italian seasoning and let it simmer for 15 – 20 min.
Transfer the sauce to a bowl and let it cool down to room temperature

Preparation of base topping:

Take a large bowl and add tomatoes, diced cottage cheese, green olives, spring onion, 25 gm grated cheese and salt to taste.

Preparing Pizza Base:

Cut the dough into 4 equal balls.
Take 1 ball and roll it into a 5 inch diameter. Use fork to prick the base and allow it to rest for 10 min.
Preheat the oven to 150 degree Celsius for 10 min.
Put the bases in preheated oven for 10 min.
Remove from oven and allow it to cool down, meanwhile adding the 2nd one.
Note: I have half cooked the Pizza base at this stage.
Making Pizza:

Take 1 pizza base and generously spread the pizza sauce.
Now spread about 75 gm grated cheese over the sauce.
Now it’s turn for base topping spread.
Finally add capsicum, onion and tomatoes.
Put the pizza into preheated oven at 180 degree celcius.
Let the pizza bake for 10 -12 min.
Remove from the oven and cut it into 4 slices using pizza cutter.

Serve them hot with ice cold cola or fresh lime soda……
