Olive and cheese Stuffed Buns
Olive Pav – Mumbai Style
Whenever I am in Mumbai, be it for Business trip or on vacation, I make sure to grab the famous Mumbai Vada Pav along with Cutting Chai(tea).

Soft Pav with hot crispy Batata(Potato) Vada is just amazing. The inspiration for this recipe came from this famous street food.
Olive and cheese Stuffed Buns is a welcome change during evening tea or a get together at home. This recipe will again include my love for olive along with fusion of western and Indian flavours in the stuffing of the bun.

All Purpose Flour (Maida) – 500 gm
Active Yeast – 1tsp
Sugar – 3 teaspoon
Salt – 1 ½ teaspoon
Olive Oil – 2 tablespoon
Ingredients for stuffing:
Carrot (diced) – 50 gm
Green Olives (chopped) – 50 gm
Cottage Cheese (paneer) – 100 gm
Mozzarella Cheese (grated)- 50 gm
Spring Onion (chopped) – 2 tablespoon
Green chillies (chopped) – 1 teaspoon
Garam Masala– 1 teaspoon
Salt to taste
Preparation of Dough:
Warm 100 ml water and add 3 teaspoon of sugar and mix water.
Now add 1 ½ tsp of dry active yeast and keep it aside for 15 mins till you see frothy mixture.
Note: Do not heat water above 80 degree Celsius otherwise it will kill the yeast and yeast will not get activated.
Take all-purpose flour, olive oil and salt in 1 large bowl and mix it well using hands.
Now add activated yeast and prepare soft dough using more Luke warm water.
Keep this dough in covered warm place for 30-45 minutes or till it doubles in size.
Puncture the dough and knead again using hands and keep it in warm place again for 30 -45 min
Preparation of Stuffing:
Take a large bowl and add
150 gm diced cottage cheese,
chopped green chillies, 50 gm. grated cheese, garam masala powder and salt to taste.
Note: I use grated cheese to keep stuffing moist and it holds the stuffing together too….
Divide the dough into 8 equal balls.
Take 1 ball and flatten it with your hand and put 1 ½ to 2 teaspoon of stuffing into the centre and fold it from all sides to again give it the shape of ball. Place it on a board or plate which is dusted with dry flour to prevent it from stiffing.
Similarly prepare rest of the stuffed balls and arrange them on the plate.
Cover it with moist cotton cloth and let it rest for 30 min.
Preheat the oven to 180 degree Celsius for 10 min.
Put the Buns in preheated oven for 30-40 min till golden brown in colour.
Remove from oven and serve them hot Olive and cheese Stuffed Buns with your favourite evening tea/coffee.
• Since olives are very salty since always preserved in brine(salt water) be careful while putting salt
• You can use a mix of black and green olives to make more colourful stuffing.
