Garlic Bread Recipe – with Olives and Fiery Peppery Dip
Garlic bread is one of the most popular Starters among Pizzerias everywhere. The trick is crispy, garlic and buttery bread with cheesy dip.
This recipe is dedicated to my sister Ruchi Bhardwaj as she specially requested for Garlic Bread Recipe.
My version of Garlic Bread will be prepared the way kids love most and of course baked fresh at home.
The difference will be generous use of Green and Black Olives and Basil in the dough itself. Also the cheesy dip will be fiery hot with use of red chilies and black pepper.

All Purpose Flour (Maida) – 500 gm
Dry Active Yeast – 1 ½ teaspoon
Sugar – 6 teaspoon
Salt – 1 ½ teaspoon
Olive Oil – 2 tablespoon
Black Pitted Olives – 6 nos.
Green Pimiento stuffed Olives – 6 nos.
Basil (dry) – 1 teaspoon
Butter – 200 gms
Preparation of Dough:
Warm 50 ml water (in microwave for 30 sec) and add 2 teaspoon of sugar and stir till sugar dissolves.
Now add 1 ½ teaspoon of dry active yeast and keep it aside for 15 mins till you see frothy mixture.
Note: Do not heat water above 80 degree Celsius as it will kill the yeast hence it will not get activated.
Take all-purpose flour, olive oil, balance 4 teaspoon of sugar and salt in 1 large bowl and mix it well using hands.
Now add activated yeast and prepare soft dough using more Luke warm water.
Keep this dough in covered warm place for about 60 minutes or till it doubles in size.
Tip: I preheat the oven to 120 degree Celsius for 10 min and then switch off and keep the dough in oven to let it rise.
Puncture the dough and knead again using hands and keep it in warm place again for 60 min.
Now add Basil, chopped black and green chopped olives and crushed garlic cloves in the dough. Apply dry all-purpose flour in both hands and knead the dough again till all the ingredients are evenly spread in the dough ball.
Note: keep on rubbing your hands with dry flour to avoid sticking of dough in your hands.
Divide the dough into 3 equal parts.
Take 1 part and flatten it with your hand and give it the shape long flat bread. Place it on a board or plate which is dusted with dry flour to prevent it from sticking on the surface. Give the slits in the bread to give the markings for bread cuts.
Similarly prepare other 2 breads arrange them on the plate.
Allow it to rest for at least 60 min more.
Preheat the oven to 190 degree Celsius for 10 min. Add a small bowl with 1/3 water in it to keep the bread soft.
Now apply water to the bread, using brush and place it in the preheated oven for 20-25 min till golden brown.
Note: Pause the oven after 10 min and apply 1 more coat of water with brush to keep them soft and the top golden in colour.
Remove from oven and allow it to cool on wire rack.
Now cut the bread into slices giving 2/3 slit so that bread remains one and open the gaps and apply melted butter using brush on each slice.
Then apply the butter on the surface top and put it in preheated oven (180 degree Celsius) again for 7-8 min.
Serve the hot garlic bread with fiery peppery dip.

- Use Extra Virgin Olive Oil instead of butter to make it healthier and it adds a very different flavor too to the garlic bread. BTW Extra Virgin Olive Oil version is my personal favourite.
- You can add Jalapeños to make garlic bread more fiery.
